Cocktail of the week: Koko kwai from Ka Pao | cocktails
Like our food, Ka Pao’s cocktail menu is inspired by the flavors of Southeast Asia. This hard-hitting little number is no exception, with coconut and lychee flavored spirits paired with the refreshing taste of fresh pineapple and citrus. It’s a great pick-me-up for an early spring afternoon.

35ml coconut rum – we use Koko Kanu
15 ml of lychee liqueur – we use Kwai Feh
35ml pineapple juice
25ml fresh lime juice
2ml aquafaba
desiccated coconuttoasted and ground to powder, to decorate
Put all the liquids in a cocktail shaker, add a good handful of ice and shake vigorously for about five seconds. Fill a rocks glass with fresh ice, double strain the contents of the shaker over the top, sprinkle with some toasted coconut and serve.
